This Invigoratingly Tangy Strawberry Kir Royal Will Rouse Your Senses
Every spring, I start craving drinks that feel lighter, less heavy cocktail, more bright bubbles with a little flair. This Strawberry Kir Royal is exactly that: tart strawberries, a quiet splash of crรจme de cassis, and icy Champagne that makes everything taste sharper and more alive.

- Make the strawberry syrup. Add the strawberries, sugar, lemon juice, and water to a small saucepan. Set it over medium heat and bring everything to a gentle simmer.
- Simmer and mash. Let it cook for 10, 12 minutes, stirring now and then, until the berries soften and the liquid turns a vivid red. Use a spoon or potato masher to lightly crush the fruit.
- Strain. Strain the mixture through a fine-mesh strainer into a bowl or measuring cup. Press gently so you get the flavorful liquid without pushing too much pulp through.
- Chill. Let the syrup cool to room temperature, then refrigerate until itโs cold. If youโre in a hurry, set the bowl in an ice bath to speed things up. Youโll only need 2 oz total for the four drinks, so tuck the rest away for another round.
- Chill the glasses. Slide 4 Champagne flutes into the freezer for about 10 minutes. If freezer space is tight, rinse them with cold water and shake them dry.
- Build the Kir Royal. Pour 1 oz crรจme de cassis and 1/2 oz chilled strawberry syrup into each flute.
- Top with bubbles. Slowly add chilled Champagne to fill the glass, tilting the flute slightly so the foam stays under control.
- Finish and serve. Give each drink one gentle stir with a bar spoon (or a long spoon), add a strawberry or lemon twist, and serve immediately.
My tips
Keep everything cold. Warm syrup or room-temperature sparkling wine will flatten the drink quickly, so chill the syrup well and start with a properly cold bottle. When you strain, donโt press too hard; forcing the pulp through can cloud the syrup. Also, taste your strawberries first, if theyโre especially sweet, you can drop the sugar to 1/4 cup to keep the cocktail crisp and tart.
Variations
Extra-tart Strawberry Kir: Add an extra 1/2 teaspoon lemon juice to each glass, or swap half the strawberry syrup for unsweetened cranberry juice. Rosรฉ Kir Royal: Use sparkling rosรฉ instead of Champagne for a softer berry flavor and a blushy spring color. Low-ABV brunch version: Replace Champagne with dry sparkling water plus a splash of white grape juice; keep the cassis, but cut it to 1/2 oz per glass.
